Early winter taste from Nature in Kyoto, Tsujitome Bento (辻留弁当 2015 12月), early December 2015, Kyoto, Japan

The enjoyment on visiting to Kyoto is to take the Tsujitome bento at Kyoto main station. Tsujitome is a famous luxury restaurant in Kyoto. This restaurant was established on Meiji era in Kyoto by Mr. Tomejiro Tsuji. The chef cook is Mr. Yoshikazu Tsuji now. He had training under Rosanjin, known as artist, cook and epicurean, who produced Japanese food as the composite art.
The changed point was material of the Bento box. The box on my visit to Kyoto on April was made of white wood. The box on this visit was made from styrene foam. The smell of wood gave the classic flavour into the foods. On the other hands, the fern laid on the bottom of the box took single smell in the box, though the box show cheap.
Japanese food were including the essence of the season by season. The Itamae will cook with his knowledge, technique and wisdom to make one course. The traditional courses called as Kaiseki (懐石) were built with various technique on the course. In this Bento box, the restaurant will produce the seasonal essence (Japanese call Shun ().) for the small box.
