Sukiyaki Bento, Asakusa Imahan, Ueno station, Tokyo

At the Bento Stand in ecute, Ueno Station

Imahan is very famous restaurant serving Sukiyaki in Asakusa, establish on 1895 at Asakusa. This restaurant has small stands in department stores or major stations in Tokyo as the sister company. You will enjoy the sukiyaki with rice easily and reasonably as sukiyaki bento.

I had been to Kumagaya to have a small party with my friends as the oyster bar style. On boarding to Kumagaya in late afternoon, I bought the Sukiyaki bento at Ueno station concourse named "ecute" which Japan railway company of East Japan had produced shopping mall for the passenger. Ueno had very local and classical Tokyo downtown atmosphere. The shops in ecute kept the style and fashions according to Ueno style. A lot of old restaurants and sweets shops, which have long history and have been well-known to the people in Tokyo had stands or small shops for the customers.

Sukiyaki bento on board to North

The thin sliced and braised beef meats were very lovely. The sugar-soy sauce based sauce show the traditional preference of Edokko (originally come from Tokyo for three generations). The sliced meats were juicy and had the nice match with rice. Sliced onion and Tofu was also braised with the sauce with the same sauce for beef. All things were very nostalgic but a little bit luxury because of the name Imahan.

Fatty but traditional style of Sushi from Kyoto

The Japanese traditional food restaurant Izuu was established on 1781. This restaurant located in Gion Shijo area where was the most crowded area with tourist.
Once we said Sushi, almost all people in the world will image the Edo(old name of Tokyo) style sushi which we call Edo-mae Sushi. Sushi had long history known as the sour rice with fishes. The traditional sushi was fermented rice with fishes. The classical sushi was preserved food for people living in the large cities around Kyoto which located as inland.
The classical fermented Sushi was developed as the Osaka style sushi. Edo-mae Sushi was cooked with fresh fishes and gripped by hand. Osaka Sushi was similar to the classical style of pressed Sushi (called as Oshi zushi).

The Package of Sushi. This season, there has small card printed the snow scene of the shrine.

The Shime Saba Zushi from Iduu was very lovely taste. Thick mackerel (Saba is mackerel in Japanese) was cooked with rice and Kombu. Shime is meaning soak some ingredient with rice vinegar and Kombu (kelp). The taste and flavour of kelp will go into the meat of mackerel. The various flavour of kelp and rice vinegar, taste of fatty mackerel and kelp Umami, and texture of the thick mackerel will show the nice harmony of the Shime Saba zushi.
You can get the half size of soaked mackerel Sushi at Isetan department store in Kyoto main station.

The sushi was rolled with kelp for soak. Before eating, Remove the Kelp from Sushi.

The small cards described about the restaurant.

Early winter taste from Nature in Kyoto, Tsujitome Bento (辻留弁当 2015 12月), early December 2015, Kyoto, Japan

No comments :
The enjoyment on visiting to Kyoto is to take the Tsujitome bento at Kyoto main station. Tsujitome is a famous luxury restaurant in Kyoto. This restaurant was established on Meiji era in Kyoto by Mr. Tomejiro Tsuji. The chef cook is Mr. Yoshikazu Tsuji now. He had training under Rosanjin, known as artist, cook and epicurean, who produced Japanese food as the composite art.
The changed point was material of the Bento box. The box on my visit to Kyoto on April was made of white wood. The box on this visit was made from styrene foam. The smell of wood gave the classic flavour into the foods. On the other hands, the fern laid on the bottom of the box took single smell in the box, though the box show cheap.
Japanese food were including the essence of the season by season. The Itamae will cook with his knowledge, technique and wisdom to make one course. The traditional courses called as Kaiseki (懐石) were built with various technique on the course. In this Bento box, the restaurant will produce the seasonal essence (Japanese call Shun (旬).) for the small box.
If you like to request the Bento from the various luxury restaurant as Kiccho, Wakuden or Tsujitome, Please contact to JR Isetan department store Kyoto located in Kyoto main station. The concierge or staff at your hotel will help you.

The Bento of autumn produced by Nada mann, the food galarie in department store, Tokyo , Japan

No comments :
Nada Mann is the famous luxuary restaurants group in Japan. On 1980 to 1990s, a lot of skillful Itamae had joined in this restaurant and customers can enjoy the Japanese traditional luxuary dinner course at this restaurants. It was the past story in theses days.
The Nada Mann played the most important part for socialising and generalising the Japanese traditional Ryotei style food as Bento or deli. We, as the foreign tourists or visitors, can enjoy the taste, seasonal dishes and presentation in one small box anywhere. NadaMann's Bento is nice textbook for the beginners of Japanese food.
This season, autumn, we can enjoy the matsutake mushrooms rice from this dinner box, bento. I hope you will enjoy the box with the view of Mt. Fuji from our bullet train.

Aji Oshizushi, Ofuna-ken, Eki-ben (駅弁紀行 鰺乃押寿し 大船軒), Shinjuku station, Tokyo

No comments :
The Eki-ben is one of the live museums of the diversity of Japanese food. The Eki-ben is the lunch box filled with local foods in the small box and sold at the railway station all over the Japan. The package or box has lovely print come from the local landmark or some characters.

This Aji Oshizushi is originally come from the Ofuna Station on the Tokaido line. The station has the junction among the Tokaido line, Yokosuka line and Negishi line in Japan Railway East. The Ofuna is located around one hour distance from the Tokyo main station. Around Ofuna area is known as Shonan area, there are a lot of beachs or marine spot and old city, Kamakura. When I caught an express train from Ofuna station, I used to buy a box of Aji Oshizushi at the plat home.

The sour taste is nicely matched with lager beer like as the malt vineger with fish and chips and beer.

The taste was very classical with sweet and sour from rice vinegar. Oshizushi in Japanese means pressed (Oshi) Sushi. This style of Sushi is major in Kansai area as Osaka or Kyoto.

The texture of this Aji Oshizushi was similar to the Edo-mae Sushi. As the name of Oshizushi, the fish was pickled with rice vinegar and softly pressed in the box. The soft rice ball texture was kept in the box and the pickled Aji got a little bit stickiness. The taste and texture were very simple but very familiar taste for Japanese.

Local food from Shinshu area on train board

On the last week end of August, I have been to the Seiji Ozawa festival in Matsumoto city. I had taken the limited express Azusa for the return journey. This train named "Azusa" was very famous as the South Japan Alps express for the climbers.
On the noon, Azusa left Matsumoto station. The late summer sunshine was coming into the carriage through the huge window. I started lunch with some wine which was produced from Shinshu area.
The wines from Nagano and Yamanashi are very popular in the Tokyo area. The sweet grapes are major agricultural products in this local. There are several famous wine producers in Nagano and Yamanashi. The famous ones are following: Nagano as Shinano, Hayashi and Idutsu, Yamanashi as Katsunuma, Tohmi, Sadoya (All are located in Katsunuma) or Enzan. All wines were known as very flesh and sweet like Austrian or German ones, but some high end products were very famous among the Japanese food restaurant.
You can get small bottle of Nagano Wine at the station
I chose the Ohito sen Eki ben, the lunch box gathered the food from the Matsu-kawa mura area along the Ohito line. The village named Matsu-kawa mura is known as the male long life in Japan. All foods are very simple and like cooked home or family. Potato was sweet and Mushroom has very juicy sauce. The rice was also sweet and cooked with purple rice. All staffs are boxed in the lovely bamboo basket.
The package made from bamboo skin

The sweet but strong tannin from the red wine was nicely matched with the lunch box.

Taiwan railway Bento(駅弁紀行 台鐡便當), Taiwan

No comments :

There are a lot of Taiwan signature dishes or food from the braised shark fin to some sweets at a stand on a street. The Taiwan railway Bento is one of my recommendation foods on your traveling around Taiwan.

The Chu-kuang express at Tainan station
The platform at Tainan station
The Bento is a Japanese word. The people in Taiwan are keeping using this word for the lunch box. The Bento in Taiwan is very different from that of Japanese. Bento is just a word for food in the box on the purpose for ___ in Taiwan. They kept the purpose of Bento. Chinese generally prefer the warm food for their dinning anywhere.

The lunch box of Bento

The Taiwan railway Bento is warm paper boxed lunch box. A large piece of pork sparerib sweet soy source and anise flavour was topped on the steamed rice fully packed in the box. Some pickled vegetables are sided on the rice.

You can buy this nostalgic Bento (only for Taiwanese and some Japanese) on the Shinkansen in Taiwan and some express trains as Taroko/Puyuma, Tze-Chiang Limited Express, Chu-Kuang express, Jugaung express or at the railway stations.

I love the marriage of the high-technology and very local taste on board.

Tsujitome Bento, Kyoto (辻留 お花見弁当 京都) 2, April 2015, Japan

No comments :
The second article about the Tsujitome bento.
I have visited to Kyoto on early April, on the Sakura have fully bloomed. The Tsujitome, one of the most luxury Japanese restaurant in Kyoto produced the Hanami bento for enjoying with Sakura. The Hanami is the seasonal event for Japanese to feel spring coming. Under the right pink bloom and little cherry smell, we enjoy some alcohol and foods. From Heian era, Japanese enjoy the colour of flower or leaves and the states of falling them. Spring is Sakura, Autum is Momiji.
The Bento has a lot of flavor or ingridient to enjoy the Sakura.

Tsujitome Bento, Kyoto (辻留 季節のお弁当 京都), Japan

No comments :
There is the easy way to taste the old classical Ryohtei dishes. Ther reservation for the Bento.
The Bento is the traditional Japanese food style for 1300 years. The ancient time, the people brought the dried steamed rice for their journey. These days, we usually bring rice ball or Bento. The Bento presents the mother's sense and love for the family member. The mothers in Japan think the balance of nutrition and the decoration. When we open the box which was alminium, Japan waxed wood and plastics , we can feel the lunch with our family. The high school girl, her father, her brother and her mother will have the same menu whereever they are staying.

The Ryotei style is a little bit different. They packed their dishes in one box for the customer, arranged the food will not get bad and will be well with cold. The taste will be tiny salty but you will enjoy the presentation when you open the box.

On my visiting Kyoto, it was like spring day. I have shared one box of Bento. For lunch, the amount of the meal is large for Japanese.
