Lovely Scottish flight above the Scotland, BE6899, EDI-KOI
The flights in Scotland were traditionally lovely local routes. The commuter flights were necessity of the local Scottish people and the tourist. I have flied to Islay from Glasgow. This time, I have use the longer route Edinburgh to Kirkwall.
The fleet was Saab340 made in Sweeden. The classical but signature fleet was flying around the Scotland, from cities to islands above Highland, from islands to cities. The configuration of the fleet was 1-2 seats. The hat rack has very small space, not for the cabin bag for the airbus commercial fleet.
As the British commercial airline company, Flybe, operated by Logan air which is the commuter airline company in Scotland, served the passengers a cup of hot drink and some sweets during the flight. On my flight from Edinburgh to Kirkwall. I had a cup of tea with milk and chocolate coated wafers. The tea with milk was served as the traditional British tastes and show the nice match with sweet chocolate.

Malay satay in the sky
Malay satay is the signature cuisines in Malaysia. Several
airlines as Malaysian Airlines and Singapore Airlines were serving Malay Satay
in the sky on Business class service.
Flight MH071
The flight of MH071 is Airbus 330-300 with new staggered abreast in Business class cabin. This aircraft has private full-flat bed type seat for the Business class passengers. The flight, MH071 will leave at Tokyo Narita international airport in the late evening and arrive at Kuala rumpur international airport on early morning. The schedule of the flight is very nice for passenger who has some connection to South East Asian cities.
Malay Satay on board, Malaysian Airlines
The aircraft had taken off and got the altitude for the level flight. The cabin crews had started to prepare the drink and meal services. The smell of braised meat and peanut sauce had hanged in the air. The cabin crew in Sarong Kebaya brought the meal cart displayed the satay and sauce.
There was two choices from chicken or beef. Some cucumber and onion will be place beside the Satays with sweet and a bit spicy peanut sauce will be served. The juicy meat and sweet sauce will be nice match with Champagne.
The cabin crew will also serve the hot towel to wipe your
fingers. This Satay will be served as Amuse bouche.
After satay plate, the cabin meal course had started.

Transatlantic flight, Madrid- Havana, Iberia, business class meals, A330-300 aircraft
High quality long haul flight service on Business class of
Iberia
The Spanish service on Iberia was very delightful as the
Business class. There was widely Spanish characteristic service from ingredient,
wines, liquors or service style and Cabin crew. We will have some selection of
Sherry wines from Spain, wines from Spain. The huge liquor selections were very
Spanish (I have no idea about the local character of Spain. Perhaps, Iberia
will serve you with Madrid style).
The aircraft was Airbus 330-300. The full flat seat staggered
arrangement were constructed. This was the first experience of the staggered
arrangement at Business class. The nice pillow and duvet were served on my
boarding. The full flat seat was very comfort as normal bed feeling.
The welcome drink on the ground was selection including
Cava, Spanish sparkling wine. The pair of Cabin crew will elegantly serve the glasses
with gentle smile.
After take-off, the drink will served with flesh olive
pickles.
The meal service will started with some cold starters. The colourful
and lovely presentation show continental taste on the meal. They also serve
some soup with Starter. Several food were served as the Tapas in Madrid. I
started with white sherry from the Starters.

wheat and vegetables

Cheese and pear parcels with Vizcaina sauce and
parsley
I chose Stone bass. The lemon flavour was nice on aircraft dry
air condition.
Deserts has two choice.

Aniseed pudding with honey and guava

Cherry ice-cream with crepe topping
Pre landing meal was also nice. I had never imagined about
the Iberico ham in the sky. It was the most impressive light meal on airplane.

Supper in the sky, First class, Tokyo - Osaka domestic route of Japan Airlines, Japan
The shortest haul of the First class full service in the world
Japan Airlines will serve as the early aeroplane age first class on domestic route in Japan on 1950s to 1960s. Champagne with Japanese traditional tastes course on one tray. The main dish was the cold plate but packed rice the most important part in Japanese food is warmed in the steam oven on board.
The selection of beverage has various from Champagne, Nicola Feuillatte, Red wine from France, Japanese Sake or Mori izo Shochu. Japanese sake, red wine and champagne will be change on the date but the signature Shochu in Japan airlines will not change on board.
The food menu will be changed every ten days. The catering company will choose the collaboration between Japan Airlines and some famous restaurants. Kobachi (as Entre) and main dish will be designed by collaborator who will change every month. The December was Suigetsu produced meal. The Restaurant Suigetsu was located in Obama city, Fukui prefecture.

Japan Airlines, Business class, Manila to Tokyo, JAL Sky Suite 767, October 2015
After all, Japan Airlines will not be able to serve as the
Business class.
Japan Airlines had produced several signature service as sky
sleeper on 1980s, Sushi bar on board on 1970s to 1980s. After the merge with
Japan Air System on 2002 and bankruptcy on 2010, the quality of service or
safety had dropped down to the bottom. These days, the safety were recovering.
The flight from Tokyo to Manila was the worst experience in
my flight records. The return flight was also Japan Airlines operation B767 service
with Sky Suite 767 seats.

The lounge was very old and small for the frequent flyers and
business class passengers. As the strange customs in Japan Airlines, they serve
Japanese style curry and rice at their lounge. The strange smell mixed with
beef, several spices, flower and steamed Japonica rice were filled in the
lounge of course in Japan also overseas.
The Seat of Sky Suite 767 was nice for taking rest. The seat
width was very narrow for sleep. If you have taken seat in middle lane 2seat ablest
can luckily use the two seats by yourself, one seat will be used for the rest
and the other can be for the upright position as Lufthansa First class on
Boeing 747-400.
The members of cabin crew has multi-ethnic from Japan and
Thailand. The Thai cabin crews kept fixity of their face with frightened
shadow. They have never shown their own hospitality, bound under the Japan
Airlines Manual conversation rule-book.
The meal was very unfortunate Japanese food. All products
from the overseas catering factory were generally very disappointing Japanese
food meals. The Shinjo Age (fried fish paste with yam) was sandy texture and
less Dashi soup stock taste. All meals were textureless and out of focus in the
Japanese food.

Very sweet cake, the cabin crews called as Opera, it will not called Opera taste in Japan.
The quality of service in Japan is under degradation in this
twenty years. The Japan Airlines have not be able to keep the Japanese traditional
service on boards.

Short haul Japan Airlines Business class (JAL Sky Suite 767) from Tokyo to Manila
The worst business class services on the aeroplane in developed countries
The Japan airlines had proud of the long history and nice quality of the Japanese style service. On this visiting to Manila, I must choose Japan airline. The aircraft was the Boeing 767-300ER which was the common aircraft for the short to middle haul international flights from Japan as Manila, Saigon, Hanoi, Bangkok, Singapore or Hong Kong.
The business class seat was the new Sky Suite 767 style which was the renovated products from Japan Airline. The Sky Suite 767 seat will be fully flatted bed but the seat has too narrow space to take a nap on these seats. The length of the seat will be fit for the foreigners but the narrow seat will be difficult to be relaxed. The relax position is Okay.

The snack which was served with the first drink service was Dry Natto and some rice chips. The Natto will be familiar to Japanese passengers thus the foreigners may not like smell and texture of Natto.
The meal service had nothing special. I chose the Japanese style menu from the lists. The portion was normal as the other airline company. All meals were placed on one tray in the JAL short haul like Manila. The meal level of this short haul was as the economy class meal service which was served on Narita-Paris JAL flight twenty years ago. The main course was a little bit less warmed because all courses were served on the same tray.

After dinner, I had some cognac from the list. The inflight service manager had brought a glass of cognac and told me in Japanese, "If we had some chocolate for you sir, (we will serve some piece of lovely chocolate)."
The cabin announce was too frequent to interupt the movie several times. Each announce was very long and superficial. The cabin crews had not pay attention for the passengers comforts.
All things were aimed at the average marks in the service for Japanese. All cabin crew have not been able to speak frequent English and had no ability to entertain and serve for the passengers. They had never served and just ridden the aircraft with passengers to place the drinks and meals, also in business class. I have not been able to find the Japanese Omotenashi service.

The very American breakfast in the sky, First class, US/AA2061
The American airlines and US airways will
merge in two years. I flew with the very American flight in American domestic.
I had very difference experience from the Japan Airlines one.
I had the choice from omelet or crape. The style of service was very different from that of British airways or Japan airline. I prefer British one. After boarding, the cabin crew came to asking the choice of the Entre and first drink. There was no selection of sparkling wines or champagnes. I had seen the tourist from America was so excited she served a glass of champagne and she ordered more two bottle of champagne (of course the quarter size) on British airways flight.
I started the journey to Houston on the
early morning in the chilled March. The temperature was 25 degree Fahrenheit.
Some airplanes were freezed the body.
After taking off, a cabin attendant served
the breakfast. The menu was as following.
Entre: The omelet with broccoli and soted

Fresh fruit
The bread choice: biscotti or whole nuts

I had the choice from omelet or crape. The style of service was very different from that of British airways or Japan airline. I prefer British one. After boarding, the cabin crew came to asking the choice of the Entre and first drink. There was no selection of sparkling wines or champagnes. I had seen the tourist from America was so excited she served a glass of champagne and she ordered more two bottle of champagne (of course the quarter size) on British airways flight.
The entre was very American style. Once I
had the flight from London to Edinburgh on early morning, I had been served the
very lovely and traditional British breakfast on the BA economy class. The
omelet is soft like sponge and very nice taste.
I was very surprised that American called
the bread like scone “Biscotti”. It looks like the shape of scone with wolf
mouse, but it was very salty, not butter-rich and very soft. I disappointed the
British people had to teach the method of making the scones on their colonized
period. And the strawberry jam was not good. The jam was made with corn silop
and some pectin; it was very different from the British airways.
The coffee was not good as that served from
Airline in Asian and European. The taste was very thin, smoky and sour like vinegar.
This was real American coffee which served in Japanese coffee shop, I have
never tasted one.
The cabin atmosphere was very comfortable
and relaxed, but American.

The Japanese breakfast on the sky(the Japan airlines first class meal in domestic route)
On the morning, the Japan airlines serve you very trad Japanese breakfast on board. My flight was early morning departure from Haneda on 7:30. The domestic routes in Japan are very short haul flight, 250 to 600 miles. The cabin crews coordinate the meal service on the first class for only 50 minute flight.
The menu
The menu of cabin meal on my flight was as following.
- the main course: the grilled salmon with salt
- the small entre: Okara(the soy beans salad) and braised flied Tofu
- steamed rice
- fresh fruit
- the beverage choice from the menu card; champagne, white or red wine, Japanese Sake, Japanese Shochu(the distilled and mature spirit, made from sweet potato, rice, sugar or flower), or Soft drink(Japanese tea, fruit juice, coffee,etc). The champagne was Brut Grande Reserve NV Nicolas Feuillatte. First class service of Japan Airlines will serve very lovely Champagne as Salon, Tettanger or Laurent-Perrier.
The meal was very lovely. The warm dish was warm and the crew had serve on nice tempo for the passenger. The salmon was low salt but very juicy, lipid rich. I reminded the breakfast at the luxury Japanese hotel, Ryokan or my home. As other flight meal on the first class, they serve the champagne or selected wine on your meal. A glass of champagne will be very nice marriage to the grilled fish and other small entre, and I like the combination of champagne and Japanese steamed rice.
Saying additional opinion, I preferred they would serve the miso soup or Japanese Dashi soup stock.
We, living in Japan, have very various choice on the board meal, from Rice ball to the first class or premium class meal, depend on what you want have. The Soraben, the Bento sold in the airport for your flight, are very nice and huge various lunch box the Japanese traditional luxury meal and Sushi, but sometimes small portion. If you find the Soraben(空弁) at the airport, please try it.
It will be different among the weeks in the month. Please check the website on your boarding.

Bibimbap in the sky, Club world, British airways
In this new year holiday, I have been to Europa with British Airways. The flight has departed from Incheon international airport, Seoul. We were assigned in the First class on the flight from Seoul, and in the Club World on the return.
I was very interested in the Bibimbap on the menu in the First class. The British airways seemed to think very important to serve the local people on board, not only British and European. On the flight to/from Tokyo, they serve very nice Japanese food on the flight. The Japanese food has very huge variation to serve onboard and it may be very easy to cook but difficult in the taste for the cabin meal, the Japanese food is very low salt. The BBC documentary about the cabin meal showed the tasting and nosing sense in the flight are lower than that of ground, due to the low air pressure and low moisture. On the other hands, the Korean food may be very difficult to serve on board, because they have a lot of soup and noodle in their recipe. The dish of hot soup may be difficult to serve on all classes.
The British airways is serving the Bibimbap on the First class and Club world, as other Korean carrier: Korean airline and Asiana airline. When I think about the Korean food, I have a lot of favourite, but no idea to serve on board.
The bibimbap is very reasonable menu to serve on board.
The bibimbap on the club world from London was very exsotic food serve some pickled vegitable and some braised meat on the steamed Indian long rice. The sesame oil smell from Korea, the oil is different from Japan in the smell, will rouse our appetite. The kimchi the serve with the main dish reminded me the flight was to Seoul. The service on board was very nice in both class, First and Club, but the BA will change the aircraft from Boeing 777 to 787. This means the First class service will close on 30th March 2015.
