The familiar Soba noodle restaurant for normal Japanese.

The dinner in Soba restaurant is very chic and looks easy but very difficult to take. This restaurant made the familiar atmosphere and served nice amount of portion for male adults. The selection of Sake was also nice.

One Sunday evening, I has been walking around Kagurazaka to find the nice restaurant to have the sapper. I had been reminded about Yabusou when I found I preferred Soba noodle on that evening. I have come down from the top of the hill of Kagurazaka to Edogawa-bashi.



The elder ladies and chef managed the shop. The tables, pillars or beams had nice contrast with the white wall as the classical Japanese house. The tables were polished and soaked into with the Sake to get the dark brown.
I started with a glass of Sake served with boiled fava beans. Fava beans are seasonal ingredient in the late spring in Japan. We found the early summer from the green and sweet smell.
The braised canard were very nice with the Sake. The juicy meat has suited with the sweet tasted from Sake.
The final is, Japanese call Shime (しめ),  is Soba noodle. I had ordered the 100% Soba noodle as my favourite.

The typical Soba noodle restaurant in Hamamatsu cho
 One Sunday afternoon, I didn't have any schedule and have been to cycling around Tokyo. I passed through the first gate of Shiba Zoujoji near to Tower of Tokyo. I reminded there was reasonable Soba noodle shop in this area, and called my friend who stayed around Shiba.
This noodle shop is not so special, very usual and typical in Tokyo. As the other Soba noodle shop, they will serve Kamo-yaki (鴨焼 braised canard), Dashi-maki (だし巻 omelet with dashi soup stock), some Tempura, Soba-miso (そば味噌 parched Buckwheat with miso) and of course Soba noodle.
First I order Taru sake which was stored in the barrel. This custom was usual for Edo to Meiji era. The smell was contained with the raw wood. This style of beverage is very rare in Tokyo. Almost all Sake is sold by the glass bottle and we do not use the pottery pot for storing sake in our home kitchen.
The staff had serve Taru sake in the pot (Tokkuri 徳利)
 
I had Dashi-maki Tamago, Kamo-yaki, Soba-miso, Satsuma-age (さつま揚げ fried mushed fish cake came from the old name of Kagoshima: Satsuma), Tempura and Soba noodle. In this early summer season, Anago is very nice to eat with tempura. They usually get more juicy meat in this season.
Soba-miso: yellow small buckwheat has nice flavour.
Dashimaki: Japanese omelet was made with Dashi soupstock.
Kamo-yaki: braised Canard

The main: juwari Soba (100% Soba)
They will also serve some special selection by180mL bottle (一合 one unit for Sake Ichi-go).

The Soba noodle in Kyoto is noodle on the soy source braised Pacific herring with Kyoto style low salty soup. All things in Kyoto are special, Soba, Ramyen, Japanese food, entertainment in Ozashiki(お座敷), Geiki and Maiko wearing Kimono, old temple and shrine, Old palaces (Palace in Japan is Only for emperor. The buildings were sometimes moved to rebuild in the temples as Chishaku-in (智積院)), mountains and rivers. These were continuous building and keeping for one thousand and three hundred years, from Ancient to Future. On walking around the small space in Kyoto, we seem to have the small class of history, Musashi Miyamoto, Heike and Genji, Nobunaga and Yoshitsune Minamoto. Each religious facility has the long nalative history.  
The Nishin Soba (herring Soba noodle) was established in Meiji era, one hundred years ago. The Kyoto's signature Soba noodle does not have so long history in Kyoto. The herring is reasonable and easy to process and good preserved fish for Kyoto. Kyoto was capital and large city in Japan but place was difficult to get fresh fish because the location is very far from the sea.The herrings were good and reasonable fish for the Kyoto people.
 What I just to say is I like this Soba noodle.
The texture of the noodle is like Nobita(see here), but it nicely matched the Kyoto Dashi soup stock which has low salty but nice flavours. Please enjoy this noodle with Shichi-mi(Nana-mi 七味).
