The casual and reasonable Chinese restaurant in Kagurazaka serving Fried rice (炒飯 チャーハン)

It was the very hot evening after typhoon has gone through the island of Japan. The hotness in the ground kept the air hot and wet. I have gotten off the metro at Kagurazaka Station to find the restaurant to have supper. After getting to the ground floor, I reminded the small Chinese restaurant near the station, Ryuhou. I stood behind the Yarai exit and turned left and left again on the first corner at the bookshop. I found the yellow eaves sign with “Lamen 龍朋.” This Japanese style Chinese restaurant, like Ramen shop, was famous as the restaurant serving one of the most delicious Fried rice in Tokyo.


There are a lot of young age, their twenties to thirties year old, customers in the restaurant. The interior of the restaurant has atmosphere of 1960s common coffee house in Japan. The Wall paper is polyvinyl and blotched as a lot of brown spots of cooking oil. The furniture sets are made of wood. The interior looks very cheap but makes us some nostalgic feeling. A lot of menu plates were lined and hung on the wall beyond our head as the common Chinese food restaurant in Japan.
I ordered a set of Fried rice from the list.
 
 
The set of Fried rice was served with plain soup and fried rice. The fried rice was very simple that they cooked with dice size roost pork, egg and spring onion. The roost pork had very nice flavour and great texture of meat and made a lovely match with sliced spring onion.
The soup was also nice. It was the fish soup stock taken with dried sardine, dried bonito and other seafood. The white brown soup stock could be served with other noodle, like Ramen at this restaurant.

They have very simple menu list but serve with their heart. The atmosphere is very lovely as the haimish and daily-use common Chinese restaurant. All dishes were served with less than one thousand yen (about eight US dollar).

Buffalo Burger, Martini burger, Kagurazaka, Shinjuku, Tokyo

 The Classical New York Style Burger at Shinjuku, Tokyo
This burger shop was established by Eliot Bergman who was born and grew in New York. This burger shop is serving the modern but pure-blooded American style burger which was built the identity till 1950s, before the MacDonald chain had spread their territory, as the bread and beef pate were nicely selected. If you go to Sasebo which has the US Navy base, there are a lot of just old American style burger shops around the city.

The huge glass window signed the shop name “Martini burger” lead the beautiful sun shine into the shop on the sunny day. The owner, Eliot, was teaching English spoken in Upper east coast, to his staff. The furniture was simple but well selected for making the atmosphere of down town in New York. In the centre of the shop, there was the white and simple bar counter the owner leaned and observed the outside of the shop.

Mr. Bergman named a lot of style of burger after the area of New York City as Fifth Avenue, Brooklyn. I have ordered the Buffalo Burger with buffalo spicy sauce and gorgonzola sauce. The burger steak was made from 100% beef meats. In Japan, it is very difficult to find the 100% beef burger shop in these islands.

They also served the lovely selection of liquors or wines. The shop vodkas for Martini were Absolute including several flavours. We can have some Californian Wine from their selection.

The combination of Martini with burger reminds me the happy hour custom in the bars of 1990s in the United States. The customs had not developed in 21st century. This combination seems a little bit old – fashioned style in New York.

Breakfast as Parisien at Kagurazaka, Paul, Kagurazaka, Tokyo

The Boulangeries Paul is a famous chain bread maker in the world. From 1990, this company had spread their shops in Japan. There were twenty two shops around Japan, run under real pasco company franchise ship.
 
The Kagurazaka area is known as Petit Paris in Tokyo. On the lower Kagurazaka main street, middle of the hill, you can find boulangerie and café facility of Paul. The interior was motive on the 19th century France. The wood table and chair set was placed as the café in Paris. In the kitchen, some craftsman were kneading bread dough or watching in the oven.



 
The set of tea or coffee and some bread was served in the morning. That morning, I had a cup of café crème and some patisseries from the show window.
  
The method was kept as original recipe from main branches in France. But butter or flower were bought by the local factories. The flavour of butter and dough was a little bit different from that in France.

Smell of spice mixture hanged in the air at the upper Kagurazaka Street in the evening. I found this phenomenon on one evening after the rain in autumn. Another day, several Indian staff of this restaurant had come downstairs with talking. Then I recognized this Indian food restaurant.

The narrow steep stirs were faced us on the entrance of this restaurant. The steps were wooden and the linen curtain (Noren) was hang at the entrance. The interior of the restaurant was the modern Japanese style. The pure wood table, white wall and orange light showed warm and relaxed atmosphere. The dishes were made as Japanese style. A lot of architecture of Japanese or Chinese calligraphy were placed on the wall.

 This restaurant basically served North Indian food, cooked by Indian cooks. One of chef was experience working at the five-star hotel in India. The Japanese style interior and service was combined with Indian local tastes.

I ordered Biryani, salad and Samosa. Mutton Biryani was very nice. The Biryani was very traditional Indian style. The rice in Biryani in Omoinoki was long Indica rice spices. The portion was small but enough to stomach of Japanese male. Smell of mutton, northern style of mixture of herbs and spice was polished. Some sweet herbs were added and show nice marriage on taste. Omoinoki has also nice wine selection from the wine cellar.

Sophisticated ramen stand in Kagurazaka

Ramen shop had opened in off-street Upper area of Kagurazaka. The atmosphere of Upper Kagurazaka is very quiet and sophisticated street through the Kagurazaka station of Tozai line. A lot of shops, restaurants or Bars which were simple but high quality and sometimes fastidiousness, as Sanlucar bar, Bar Kakinuma or Omoino ki, stood along this streets.

The ramen at this Tanaka-ya might have reflected the atmosphere of this place. Light yellow clear soup was made from pork bone soup stock base. The taste of salt was not strong but helped the taste of the soup stock. The soup may have been nicely cooked by the chef of this ramen stand. The noodle was little bit thick, straight. All toppings of the ramen were basic but well selected and nicely cooked. The texture, taste and flavour were very soft touch to our five senses.

The serving style was also lovely. Ramen bowl was placed on a plate.

The name, Chuka Soba (meaning Chinese noodle), will recall us about the traditional soy sauce based, brown soup stock. The concept of Chuka Soba had fitted to this quiet town, Kagurazaka.

Strawberry is shipped to the market in Japan from late December to early April. The strawberry on early phase is for the Christmas cake as the commercial market. From late January, the taste and flavour of strawberry in market are getting better, sweeter and richer.
The strawberry has also lovely matched with white wine including champagne. This corroboration this small red fruits and white wine were giving more flavour and taste each other.
The combination of foie gras and strawberry is one of the best marriage in the foie gras combination. The combi with Hoshigaki (dried persimmons) in SIGNATURE of Mandarin Oriental Tokyo showed the new marriage of foie gras. The texture and condensed sweetness of dried persimmons were well balanced on the dish. This combi with strawberry show Japanese style European dish.
The sautéed Foie gras were cooked as complete European dish. The scattered strawberry were mixed the cooked ones and raw ones. The cooked ones had got sweeter taste, and the raw one had given the flavour on the dish. The texture of both type of strawberries were also contrasts.
The wine with this dish will be the most difficult to discuss. Champagne must be nice as Bollinger or Recoltant blanc de noir. The sweet wine as Sauternes will be musty and show the identity of itself.
I choose I Giusti & Zanza.

Chinese tapas bar for whoever love to take various liquor at Kagurazaka
The narrow wall with navy blue tiles was the trade mark of this bar. The space was narrow and long. The cooking stove was placed beside the entrance. The sign of this restaurant was the trend of the letter design in Taiwan.

The chef was come from Taiwan and cooked very local tastes but major menu of Chinese food. All food will match the liking for the people who love to drink.

The selections of drink were very simple but showing the master's abilities for the blending or making. The Shaoxingjiu with Soda and the ginger soda (vodka base drink) was nice drink for the starter. The hot Shaoxingjiu was served lovely temperature for warming your body in the chilled winter evening.

Chinese mitten crab (Shanghai crab), Meisyan, Kagurazaka, Shinjuku (梅香 神楽坂), Tokyo

Chinese mitten crab (Eriocheir sinensis) was called as Shanghai crab in Japan. This ingredient was very familiar to the gourmand in Japan, Taiwan, Hong Kong and Mainland East coast of China. The season of this crab is generally October to December.
The crab is very popular ingredients of the winter season in Japan. Hokkaido and prefectures of Sea of Japan side had landing fisherman’s port which had also well-known fisherman’s market. The period of fishing Kobako kani (Kobako crab) in Ishikawa prefecture had strictly fixed from 6th November to 29th December in female crab for preservation of this crab spices.

This restaurant had served the Shanghai crab as the Shanghai style. The steamed crab were common in Chinese restaurant in Far East. The crab pickled in Shaoxingjiu or fried spring roll with crab were served.
The crab pickled with Shaoxingjiu (drunken crab) will give us the taste of whole body of crab meat in the spirits flavour. The Shaoxingjiu taste and flavour was similar to matured whiskey in sherry barrels or Sherry wine, the sweet taste and Ceylon tea like flavour. The complex flavour and taste were stuffed into the crab meat and organs. The Kani Miso (カニ味噌 the internal organ of crab in the shell, orange to green colour. Midgut gland, digestion system in crab) is the important part on tasting crab meats. This part were including Umami and lipoid taste. The meat of almost-raw crab, because this crab is just pickled in liquor for several days, has very lovely texture, like jelly including fibre of protein and juicy body coming from cholesterol.

Bar Kakinuma (Bar 柿沼 神楽坂), Kagurazaka, Shinjuku, Tokyo [retouched]

"To shake, to serve". Bar located on the upper Kagurazaka, proudly very nice location.

The Gimlet in Bar Kakinuma had already described.

This bar, Bar Kakinuma is my favourite bar in Tokyo.
The bartender, name was Mr. Kakunuma was 30s, and one of the best young barman of who I know. He had very nice carrier of the Barman and service, once he have been in luxury hotel as the barman. He had very huge knowledge and technique to serve the cocktail and other beverage. He also knew the whiskeys, rums, tequila or sherry in the world. He usually serves the very classical style cocktails and is good at making the dry ones.
The bar has the various hard liquors like rums, sherries, tequilas and brandies. The barman selected very nice beverages for customers. If you like to stay with your friends to talk over the glasses, they have very lovely personal corner.


The lantern is the landmark of entrance of this bar. Up to the first floor! 
The several glasses, made in Japan, were lovely thin glasses, called as Usuhari (うすはり). This type of glasses were very nice touch to your lips with liquor texture. The tumbler include cocktail, like gin with tonic, highball or Mizuwari(水割, Japanese original drinking style for whiskey, twice or triple up with ice).
 
The bar counter is natural wood coated with varnish, but we can feel the texture of the wood from the counter. The length of the counter is five meter. The thickness is very nice for our drinking, it is not so thick but not thin. The sound on putting a glass with liquid on the wood is majestic and fine. For the customer, we have the enough space for relax and enjoying whiskey, Rum or cocktail. The austere but profound counter is the signature of this bar. The cocktails, whiskeys or other liquor which are served in this bar, are commensurate with this counter. In Kagurazaka, it seems that the counter condition reflected in the bartender’s ability.
Moving your eyes to the horizontal beamed sherves, funeture or entrance, the interior of this bar was modern Japanese. The counter is running through the room, like the bar. The shelves are motif from the Japanese sherves made alternatively as the traditional Shoin style(書院, personal library).
 
The bar counter was beautifully polished and showed lovely colour for the cocktails.
 I usually order some gin with tonic water, whisky and gimlet which is dry and a little bit sweet without lime juice as classical gimlet, like Gimblet.
On this photo, I ordered Moscow Mule. The cocktail was served with the chilled bronze cup. The Barman made with the original ginger syrup, vodka with pickled ginger and very dry ginger ale. The Moscow Mule was very nice for the hot days in Summer.
The contrast between white colour of the coaster and hot towel and the right brown colour of the wood was one of the beautiful scene in the daily life in Japan.
 

I hope you will use to have aperitif before supper and have some cigar and drinks after dinner, which I love how to use this bar. There are a lot of nice restaurant or bistro in upper Kagurazaka from Italian or French to Japanese. You will have very lovely evening with this bar.

The familiar Soba noodle restaurant for normal Japanese.

The dinner in Soba restaurant is very chic and looks easy but very difficult to take. This restaurant made the familiar atmosphere and served nice amount of portion for male adults. The selection of Sake was also nice.

One Sunday evening, I has been walking around Kagurazaka to find the nice restaurant to have the sapper. I had been reminded about Yabusou when I found I preferred Soba noodle on that evening. I have come down from the top of the hill of Kagurazaka to Edogawa-bashi.



The elder ladies and chef managed the shop. The tables, pillars or beams had nice contrast with the white wall as the classical Japanese house. The tables were polished and soaked into with the Sake to get the dark brown.
I started with a glass of Sake served with boiled fava beans. Fava beans are seasonal ingredient in the late spring in Japan. We found the early summer from the green and sweet smell.
The braised canard were very nice with the Sake. The juicy meat has suited with the sweet tasted from Sake.
The final is, Japanese call Shime (しめ),  is Soba noodle. I had ordered the 100% Soba noodle as my favourite.

The Edo style Unaju in Edogawa-bashi

The Unagi is very popular food in the mid-summer season in Japan. The people want to visit the Unagi restaurant to have some Unagi dishes.

The smell of the Unagi restaurant is unbearable for Japanese. The sweet, smoky, caramelized and oily smell will stimulate our stomach to eat or drink more foods or alcohol. The smell is very important essence to advertise the Unagi restaurant.

Unagi is called as eel in English. The foreigner may not love to eat that shape long and smooth and glistening fish. But for Japanese, that will be the most luxury ingredient in the summer or one seasons. Some researchers focused on how to agriculture the adult eel by the human technology.
 
The interior of Hashimoto. The style is very typical style as a restaurant the specialised into Unagi.
 

Let’s go back to Hashimoto. Hashimoto was established on 1830s. She has very long history as a Unagi shop. They will serve several cooking styles of Unagi as Unaju that is the most luxury style, Kushimono or soup. The Unaju generally takes around thirty minutes till serving it in front of their customer. The customer will wait for Unaju over the some side dishes till Unaju will be served.
I have stared with several side dishes and Japanese Sake.
 
I had Kikumasamune Japanese Sake. This Sake is usual alcohol at general Japanese food restaurant.

The second dish was braised chicken as Yakitori.

Till served the Unaju, I would like to talk about what and how to cook the eel in Japan. There is some difference on the cooking Unagi among Japan area. The eastern side as Tokyo is the soft meat style, the western side as Nagoya, Osaka is the crispy style on cooking. I prefer the eastern style. In Tokyo, you will eat very soft and juicy meat of eel. At first, the chef will steam the eel before braising. Once steaming the eel, that will get very soft and juicy meat in itself. After steaming, the chef will dip it into the pot filled with Tare that is made of soy sauce, Mirin and Japanese Sake. Dipped eel will be braised. The braised and dipped were circulate till the eel will get shiny brown but very juicy cooked meat. Unaju will served the braised eel topped on the rice with filled Tare sauce.

The harmony of the eel meat, rice and sauce is wonderful in the smell to taste. The luxury restaurant will use the traditional Japan lacquered wood box to serve Unaju. The looks of the Unagi is lovely.
 
I highly recommend you to reserve your seat on your visiting.

Re-visit, Sanlucar bar, Kagurazaka, Tokyo, Japan

One of the most famous bars had come back!!
 
These several weeks, this bar has been closed due to the operation. The bar has come back to normal opening. I have re-visit to this bar for my post dining entertainment.
 
I had started with gin with tonic. The normal style in Tokyo has served in front of me. I had satisfied my thirsty with this beverage after cycling around the metropolis of Tokyo.
 
The sherry is one of the most signature drinks in this bar. The master has the license of venenciador of the sherry. He will serve the best choice of the sherry for your condition or you favour from his stocks. The bottles of sherry have been stored in the 15 degree Celsius wine cellar. The best condition and selection will be serve for you.

The cocktail will very nice for you. The barman had signature victory in a lot of championship. His cocktail has been the lovely harmony in one glass of cocktail. The gimblet I have ordered on my visiting was very nice harmony on the glass. The clashed ice pieces have shown as the snow on the glass.

The business hour will change from 4th August 2015.

The perfect balance among the flavours and taste in Szechuan dishes

There is small entrance and small dinning space, but warm hospitality and delicious dishes. This small restaurant is located in front of the metro station of Ushigome-Kagurazaka. This area of the Okubo Street is a little bit darker than the other area of the street. The light of the restaurant looks like the oasis in the desert. The interior was very simple like the local restaurants in the Taipei city centre.

The staff of this restaurant are two ladies and sisters. They serve the courses with their great chemistry coming from the relation of sisters. The menu list show they have deep insight in also the wine.

On my visiting, I ordered hors d'oeuvres, Mapo doufu (Sichuan dish of tofu and minced meat) and Tan tan men (Szechuan dish of noodles covered with a sauce of sesame paste and chili oil). As the hors d’oeuvres, they served firefly squid pickled with shaoxingjiu (紹興酒), beef reticulum and steamed chicken with chili oil (口水鶏).

Each course has the wonderful taste and flavour. In the hors d’oeuvres, I can have one pint of lager beer with this dish. The firefly squid has the essence of the shaoxingjiu. Once I bitted a squid, with filling my mouth with the sweet taste and flavour of this liquor. The steamed chicken was lovely. The balance of the sauce among the chili miso paste and chili sesame oil was wonderful.

The Mapo doufu (麻婆豆腐) is the best dish on my experience. The flower of Japanese pepper was significantly flavoured and tasted on this dish, but the chef was able to control the balance of the each element. This dish has a power of exhalation in our body, the Japanese pepper has also effect to warm stomach.

The tan tan men without soup was the last course. The texture and flavour of pine nuts was nicely matched with the sauce and noodle.

The Italian but very Japanese flavour dishes.

This Italian bistro is located near the shrine Akagi in upper Kagurazaka. They have just eight tables in the hall. The friendly three staffs will welcome you.
They cook the dishes from Japanese food. The seafood were come from Noto, Ishikawa and the meat, they served jibies(wild game) in winter season, were come from all over Japan. The canal was come from Kagoshima, the dear was come from Hokkaido and the beef was come from Iwate. The vegetable were  come from Kamakura. The dishes were served with Japanese seasonal ingredients.

The Pasta and risotto are also nice. The rice keep a little bit hard in rice core. The sauce was wonderful with the essence of shrimp.The shell of shrimp was grilled till given crispy. The flavour, sweetness and texture of the shrimp will be satisfied with your sense.

They present the a la carte on the black board in Japanese.  But the floor staff may be able to speak in intermediate Italian. He will coordinate the course for you(Usually Japanese like to share and change the course on the table.)
In the early summer season, the fish named Isaki or striped pigfish was lovely. Some chef called this kind of fish as the black fish. The skin of Isaki is black. The flavour was very nice like Islay malt smokiness and seashore smell. The meat was very sweet and juicy. The grilled Isaki with sea salt and Somen noodle (vermicelli) were a common feature of my family in the early summer time in my childhood.

They will serve so delicate Italian dishes as the real Japanese traditional dishes with well selected Italian wine. One of the best Italian in Tokyo as Attore Ginza.

A feature of Bar in Kagurazaka, Tokyo

What you drink or where you drink is as very important as what you eat. Kagurazaka is the town that a lot of bar were located in very small area. In this town, these “what” or “where” is very important for us, visitor.

 To drink to be satisfied himself or herself is very difficult; to drink to be drunk will be easy.

There are a lot of conditions when someone choose a bar, from location, cocktail, bartender or bar interior. There are also a lot of factor to satisfy someone when drinking at a bar, as customer-self (physical or mental condition), weather, temperature, society or companion so on. These factor and condition will be a matrix which made a customer satisfactory.

I would like to introduce the bars from Top of the hill of Kagurazaka.

Sanlucar bar

The barman plays the harmony for your glass.

The cocktails are based on the harmony of the liquors. The hard shaking which is special in Japanese Bartenders will make a glass of cocktail beautiful and mellow inside. The technique is very sophisticated and the service is warm.

The right brown wood and white wall show very nice contrast. The latticed large window will be the design from traditional Japanese town house, Machiya (町屋).

I felt yearning toward my visiting to drink a glass of cocktail on the early afternoon.

*This bar is very famous and popular for Bar-geek in Tokyo or Japan. It is very difficult to find a seat for yourself.

Bar Kakinuma (Bar 柿沼)

Feel the marriage of the liquors.

The balance of the cocktail served at this bar is lovely, sweet, dry, bitter or spicy etc. All flavour and taste have nice marriage in a glass. The Bartender’s skill was wonderful on steering and shaking. The selection of the vintage liquor, whiskeys or Rums is perfect.

The grey brown wood counter and white Japanese stucco made a traditional Japanese atmosphere. I feel comfort to drink a glass of gimlet on leaning against the mortal wall.

The liquor history in the historic area

There are a lot of vintage whiskeys on the shelves behind the bartender. I will not be able to decide the liquor which I would like to have. You will find the history of the whiskeys or other old liquors from his selection. The cocktails are also lovely.

The red brown wood bar counter were well polished. The lalique glass will reflect the beautiful days in Kagurazaka. I need a jacket to visit this bar for presenting my respect for the barman and the history of liquors.

The sapper is lovely as the public house in Scotland. Sudden some Scottish words were kept on rising to my lips. The interior is very traditional British style.
