Issen yoshoku, Gion, Kyoto (壹錢洋食、祇園、京都), Japan
Kyoto will have a city with huge diversity coming from the long history of this city...
My friend from Kyoto introduced me this fast food originally coming from Kyoto. This fast food stand was very strange for the outsider of Kyoto. We had the stereotyped image on Kyoto as sophisticated food as Tofu, Obanzai (local family foods) or Kaiseki course, old temples and shrines, beautiful gardens or beautiful Maiko. All symbol of Kyoto we reminded show the upper class, high grade or quality, patterned image on Kyoto.
My friend's introduction about Issen Yoshoku was very huge impact for me. The statues in front of the stand will not be able to be said as "graceful" a boy whose underwear was bitten by his dog show his buttocks. Several items in the restaurant show as the same direction of the statues.

Okonomiyaki at Issen Yochoku
Above all, the Okonomiyaki (the spell was different from the Osaka or Hiroshima style Okonomiyaki ; Japanese style Pancake) was cheap fast food as I had never imagined in Kyoto. The Okonomiyaki was served with thin sliced seaweed and brown sweet salty sauce which is stronger than Osaka in that of taste. The ingredient in the Okonomiyaki was very interesting as konnyaku(jelly made from paste of konjak flour) and chikuwa(minched fish meat shaped as bamboo) which were very traditional ingredient at our home. The half-cooked egg show the nice harmony with the brown vegetable sauce. The Konnyaku and chikuwa brought nice texture to Okonomiyaki.

The Taisho era taste interior. After Meiji era, the European culture will go into the citizen in Japan as cloth, politics as democracy, technology, science and food and combined with the Japanese traditional culture to formed as Taisho culture.

Fatty but traditional style of Sushi from Kyoto
The Japanese traditional food restaurant Izuu was established on 1781. This restaurant located in Gion Shijo area where was the most crowded area with tourist.
Once we said Sushi, almost all people in the world will image the Edo(old name of Tokyo) style sushi which we call Edo-mae Sushi. Sushi had long history known as the sour rice with fishes. The traditional sushi was fermented rice with fishes. The classical sushi was preserved food for people living in the large cities around Kyoto which located as inland.
The classical fermented Sushi was developed as the Osaka style sushi. Edo-mae Sushi was cooked with fresh fishes and gripped by hand. Osaka Sushi was similar to the classical style of pressed Sushi (called as Oshi zushi).

You can get the half size of soaked mackerel Sushi at Isetan department store in Kyoto main station.
The sushi was rolled with kelp for soak. Before eating, Remove the Kelp from Sushi.

The enjoyment on visiting to Kyoto is to take the Tsujitome
bento at Kyoto main station. Tsujitome is a famous luxury restaurant in Kyoto. This
restaurant was established on Meiji era in Kyoto by Mr. Tomejiro Tsuji. The
chef cook is Mr. Yoshikazu Tsuji now. He had training under Rosanjin, known as
artist, cook and epicurean, who produced Japanese food as the composite art.
The changed point was material of the Bento box. The box on
my visit to Kyoto on April was made of white wood. The box on this visit was
made from styrene foam. The smell of wood gave the classic flavour into the
foods. On the other hands, the fern laid on the bottom of the box took single
smell in the box, though the box show cheap.
Japanese food were including the essence of the season by
season. The Itamae will cook with his knowledge, technique and wisdom to make
one course. The traditional courses called as Kaiseki (懐石) were
built with various technique on the course. In this Bento box, the restaurant
will produce the seasonal essence (Japanese call Shun (旬).) for
the small box.

Lobby lounge, the Ritz Carlton Kyoto, Nijo, Kyoto
The classical designed modern public space
in luxury hotel
I had already report this hotel lobby in
former article. On this article, I would like to write about the lobby lounge
on my last visiting in this December.
The last visit article
The interior of the lobby lounge was
designed with white woods and wood crafts and the warm orange lights. This
lounge has the book shelves as the library displaying the designers or
photographers books. On this floor, located on the ground floor, has the
terrace faced to the Kamo-gawa River. As the summer seasonal icon in Kyoto, the
large terrace above the river named Kawadoko, this terrace will make memorable
comfortable days in Kyoto (The mid-summer and mid-winter season has not been recommended
from Kyoto people because of the tough climate.).

The sweets were come from the Pierre Herme
which has the chocolatiers boutique in this hotel. They have huge selection
from the wine, tea or coffee. The meal will be served as Afternoon tea service,
luxury buggers (will cost 10000JPY), light snack or pasta for the customers.

The Ritz Carlton Kyoto, Nijo, Higashiyama, Kyoto
The hotel I would like to try to staying when I visit Kyoto.
The Ritz carlton Kyoto is the newest luxary hotel in Kyoto. The hotel has very nice view and location to looking and access the Higashiyama(東山) from this hotel. I will introduce this hotel just the entrance or the loby area because I felt very beautiful and quiet time when I have been this hotel without staying or dinning.
You will find a lot of dinning spots or bar, sightseeing spots or excurtion spots around this hotel. This area the hotel located is my favourte in Kyoto

The Ritz carlton Kyoto is the newest luxary hotel in Kyoto. The hotel has very nice view and location to looking and access the Higashiyama(東山) from this hotel. This luxury hotel was located in Kiyamachi
area, the posh area in Kyoto. The sound from the stream in Kamo-gawa River has
nice rhythms in this quiet area. From the hotel room, you will have signature
skylines of the Higashi-yama Mountains and Kamo-gawa River. These landscapes
are one of the most beautiful spots in Kyoto. From Ancient, Arashi-yama,
Kamigamo and Higashi-yama areas were known as the religious area. There are a
lot of temples and shrines in these areas. The towns were built around these
areas for the visitors of these religious facilities.
You will find a lot of dinning spots or bar, sightseeing spots or excurtion spots around this hotel. This area the hotel located is my favourte in Kyoto

The Soba noodle in Kyoto is noodle on the soy source braised Pacific herring with Kyoto style low salty soup. All things in Kyoto are special, Soba, Ramyen, Japanese food, entertainment in Ozashiki(お座敷), Geiki and Maiko wearing Kimono, old temple and shrine, Old palaces (Palace in Japan is Only for emperor. The buildings were sometimes moved to rebuild in the temples as Chishaku-in (智積院)), mountains and rivers. These were continuous building and keeping for one thousand and three hundred years, from Ancient to Future. On walking around the small space in Kyoto, we seem to have the small class of history, Musashi Miyamoto, Heike and Genji, Nobunaga and Yoshitsune Minamoto. Each religious facility has the long nalative history.
The Nishin Soba (herring Soba noodle) was established in Meiji era, one hundred years ago. The Kyoto's signature Soba noodle does not have so long history in Kyoto. The herring is reasonable and easy to process and good preserved fish for Kyoto. Kyoto was capital and large city in Japan but place was difficult to get fresh fish because the location is very far from the sea.The herrings were good and reasonable fish for the Kyoto people.
What I just to say is I like this Soba noodle.
The texture of the noodle is like Nobita(see here), but it nicely matched the Kyoto Dashi soup stock which has low salty but nice flavours. Please enjoy this noodle with Shichi-mi(Nana-mi 七味).

The second article about the Tsujitome bento.
I have visited to Kyoto on early April, on the Sakura have fully bloomed. The Tsujitome, one of the most luxury Japanese restaurant in Kyoto produced the Hanami bento for enjoying with Sakura. The Hanami is the seasonal event for Japanese to feel spring coming. Under the right pink bloom and little cherry smell, we enjoy some alcohol and foods. From Heian era, Japanese enjoy the colour of flower or leaves and the states of falling them. Spring is Sakura, Autum is Momiji.
The Bento has a lot of flavor or ingridient to enjoy the Sakura.

There is the easy way to taste the old classical Ryohtei dishes. Ther reservation for the Bento.
On my visiting Kyoto, it was like spring day. I have shared one box of Bento. For lunch, the amount of the meal is large for Japanese.

The Bento is the traditional Japanese food style for 1300 years. The ancient time, the people brought the dried steamed rice for their journey. These days, we usually bring rice ball or Bento. The Bento presents the mother's sense and love for the family member. The mothers in Japan think the balance of nutrition and the decoration. When we open the box which was alminium, Japan waxed wood and plastics , we can feel the lunch with our family. The high school girl, her father, her brother and her mother will have the same menu whereever they are staying.
The Ryotei style is a little bit different. They packed their dishes in one box for the customer, arranged the food will not get bad and will be well with cold. The taste will be tiny salty but you will enjoy the presentation when you open the box.
On my visiting Kyoto, it was like spring day. I have shared one box of Bento. For lunch, the amount of the meal is large for Japanese.

This restaurant was located in the very beautiful area in Kyoto, near the Kamo Gawa river. It was a little bit warm day in February, like the spring day I had very beautiful sunshine. After passing the Spring coming day, Japanese call Rissyun(立春), several days were warm and another several days were cold like winter.
Once I went into the restaurant, I found the drawn-arc counter around the kitchen space. The Itamae and two staffs were cooking and serving to the custamer. There were several fire area back of the kitchen and I was invited to the seat in front of the very large cutting board. The Itamae, we call the chef of Japanese food, cooked and decolated the courses with eregance.
The Japanese full course has name on each course and has meaning. The first is Sakitsuke(先付), like the starter or amuse busche. After that, the courses will start along Wanmono(椀物), Mukoutuke(向付), Yakimono(焼物), Nimono(煮物), Gohann(ご飯), Kanmi(甘味). There are several style they call the different names, but the course flow are almost same.
I like the taste basic and direction of this restaurant, light salt but it was for the Kanto people, the Kombu flaved dashi and vegitables coming from not only Kyoto.
The menu was start with the starter, boiled petasites with Japanese dashi soupstock. The dashi was thicken with Katakuriko. The dashi, the most important base of Japanese dishes, was so lovely I can smell the tangle(Kombu) and Katsuo, the soupstock in my home was based the flying fish on this season. I can realise the basic and origin of the course taste in the first starter.
After this warm starter, the forteen course are along to the desert. Each course was wonderful. On this article, I would like to introduce my favourite courses from the 15. The Wanmono, the Japanese soup, was the Shirauo, Shinjo and Nanohana, with dashi soup. They served that in the beautiful and modern Japan wan, designed the plam flower and tree.
The yakimono, broiled fish was Nodoguro. It was juicy with oil and very nice smell of the fish. This was the first time, I was able to enjoy what the Nodoguro was.
The Asparagus salad was served as the Hashiyasume. The dressed source was made from the onion but the flavor is the real Japanese style.
I found the Kutani porserin was very beautiful for the Kyoto style Japanese food. I am usually using the porserin from Arita or Imari at my home. The red was different, the Kutani red has the shadow in the red colour. And the blue, yellow, green and brown is very beautiful with the Sashimi of Maguro, white colour fishes and shellfishes.
In fact, I would not like to write so much on this article. The restaurant does not only serve you the dishes but show and make you know what is the Japanese foods and culture as their style. If you are interested in this restaurant, Please call and make the reservation for your seat. They will entertain you.
The staff said the canal "Takase Gawa" in front of the Kappo will have very beautiful scine on the cherry brosum season. There are a lot of Sakura trees on the canal side. I hope I can come here again on April.
