Rooster Bar, Shinjuku 3 Chome, Shinjuku, Tokyo
This bar was located on the first floor in the multi-tenant
building. From the ground floor, there was only stirs to first floor, next to
the mustard & wine A restaurant (former Chinese tapas Renge). The customer who
coming into this bar will face to the bar counter and a painting of Rooster as
the symbol of the bar.
The Art deco motive design shown the nicely matched with the
British traditional style furniture. The columns were Art deco style and hang
the lump made with glass. One set of Wingback chairs was placed on the floor,
in front of the door space. The leather covered the chairs were tanned red. The
red colour was nicely accent in the room.
The bar man was around 40 year old gentlemen who wear in the
white jacket. His name was Mr. Yamaguchi. He had told about single malt whiskey
and cigar. He will serve very lovely choice of whiskey from his selection and
also make some cocktail as your favourite. The Cigar selections were mainly come
from Cuba and chosen the short type for the customers as Peti corona.

Bar Kakinuma (Bar 柿沼 神楽坂), Kagurazaka, Shinjuku, Tokyo [retouched]
"To shake, to serve". Bar located on the upper Kagurazaka, proudly very nice location.
The Gimlet in Bar Kakinuma had already described.
This bar, Bar Kakinuma is my favourite bar in Tokyo.
The bartender, name was Mr. Kakunuma was 30s, and one of the best young barman of who I know. He had very nice carrier of the Barman and service, once he have been in luxury hotel as the barman. He had very huge knowledge and technique to serve the cocktail and other beverage. He also knew the whiskeys, rums, tequila or sherry in the world. He usually serves the very classical style cocktails and is good at making the dry ones.
The bar has the various hard liquors like rums, sherries, tequilas and brandies. The barman selected very nice beverages for customers. If you like to stay with your friends to talk over the glasses, they have very lovely personal corner.
The several glasses, made in Japan, were lovely thin glasses, called as Usuhari (うすはり). This type of glasses were very nice touch to your lips with liquor texture. The tumbler include cocktail, like gin with tonic, highball or Mizuwari(水割, Japanese original drinking style for whiskey, twice or triple up with ice).
The bar counter is natural wood coated with varnish, but we can feel the texture of the wood from the counter. The length of the counter is five meter. The thickness is very nice for our drinking, it is not so thick but not thin. The sound on putting a glass with liquid on the wood is majestic and fine. For the customer, we have the enough space for relax and enjoying whiskey, Rum or cocktail. The austere but profound counter is the signature of this bar. The cocktails, whiskeys or other liquor which are served in this bar, are commensurate with this counter. In Kagurazaka, it seems that the counter condition reflected in the bartender’s ability.
Moving your eyes to the horizontal beamed sherves, funeture or entrance, the interior of this bar was modern Japanese. The counter is running through the room, like the bar. The shelves are motif from the Japanese sherves made alternatively as the traditional Shoin style(書院, personal library).
I usually order some gin with tonic water, whisky and gimlet which is dry and a little bit sweet without lime juice as classical gimlet, like Gimblet.
I hope you will use to have aperitif before supper and have some cigar and drinks after dinner, which I love how to use this bar. There are a lot of nice restaurant or bistro in upper Kagurazaka from Italian or French to Japanese. You will have very lovely evening with this bar.

On this photo, I ordered Moscow Mule. The cocktail
was served with the chilled bronze cup. The Barman made with the original
ginger syrup, vodka with pickled ginger and very dry ginger ale. The Moscow
Mule was very nice for the hot days in Summer.
The contrast between white colour of the coaster and hot towel and the right brown colour of the wood was one of the beautiful scene in the daily life in Japan.

Main Bar, Tokyo Kaikan, Fukoku Building Hibiya, Tokyo, Japan
The old fashioned American taste cocktails in Main Bar, Tokyo
Kaikan
Under the US military administration from late 1940s to
early 1950s, the General Headquarters, the Supreme Commander for the Allied
Powers (GHQ/SCAP) placed the government in Daiichi-Seimei building in
Marunouchi. There was Tokyo Kaikan along the rows of building in Palace side
including Daiichi-seimei building. In Tokyo Kaikan, there were various famous restaurants,
ball rooms and Bars. This building is one of the symbol of food culture in
Tokyo. Marunouchi and Hibiya area is business area in Tokyo. The building of
Tokyo Kaikan was temporary closed for renovation till 2018. Main Bar and
Rossini have opened at Fukoku Building next to Hibiya park.
The Tokyo Kaikan was established on 1920. This building had
a lot of ball rooms for the weddings or business events. The largest ball rooms
had the capacity of five hundred tables for the banquet. After the World War
II, The Tokyo Kaikan had been requisitioned by the US military government as
American Club of Tokyo. Through the requisition under GHQ/SCAP, American
cultures of upper class of United States as cocktails, table manner, cooking
technique or service had come to this building. The staff and habit in this
building showed vestige of Old golden ages of America.
The Main Bar used to be crowded with officers under the US
military administration, late 1940s. The officers tell the recipes or fashion of
cocktails from United States. There were several legacy cocktail, now known as
the signature cocktails from Tokyo Kaikan. Kaikan style Gin Fizz and Dry Martini
were signature cocktails related with the US officers. The former cocktail has
the cute story, told in Tokyo Kaikan, that some officers who wanted to drink
from morning order Gin Fizz with milk to show drinking just a glass of milk. General,
Douglas MacArthur was very strict not to drink some alcohol in early morning. The
taste of this Gin Fizz was very creamy but had nice balance of sweetness and
sourness. I hope American who has grandfather as US officer in Tokyo 1940s, to
taste this cocktail as his or her grandfather. The taste or flavour had not
changed.
Kaikan style Gin Fizz
The other one, Dry Martini is very famous cocktail known as
the king of cocktail in Japan. The recipe was very simple. Mr. Kiyoshi Iamai, former
Chef Bartender at Tokyo Kaikan, investigate on Martini. He built up original
recipe and technique of Martini at Tokyo Kaikan. A lot of cocktail geeks in
Tokyo had experience to try Dry Martini at Tokyo Kaikan.
You can taste these cocktail at the Royal Bar in Palace
Hotel Tokyo. The Bartender, Mr Imai had moved to the Hotel as the Chef
Bartender.

Bar NonNon, Hilltop Hotel, Ochanomizu (ノンノン 山の上ホテル 御茶ノ水 東京), Tokyo
The Hilltop hotel were located on the top of the hill in Ochanomizu area. The Ochanomizu area is the cultural and university area in Tokyo. The university of Tokyo is located in the north of this area. In the bottom from this hill, there is the street of Jinbo-cho, antique and used books shop street. This area is the heart of academism in Tokyo. This hotel is located in the heart of academism and a famous classical hotel in Tokyo.
On the ground floor, the bar is located in right side from the entrance. In the back wall from the customer position, there were very beautiful stained glass. The counter was nicely polished as reflexing the light in the small space. The young bartender will serve to you. The chef Barman, named Mr. Takeuchi, is famous in Tokyo.

I ordered gin with tonic and gimlet on my visiting. I heard a lot of old book lovers visited to this bar after bought the targeted books and opened the book on the counter with happy faces. The sweet smell of the old book will be lovely marriage to the Speyside whiskey.

Is the Bond martini (shaken vodka martini) delicious for drinkers?

“James is not a real drinker, I think. The Bond martini is
small amount of alcohol because the shaking sound is very dull with clashing
ice sound, thus the martini glasses are very large.” The lady who love to taste
the cocktails in the famous bar said and I said “The Martini which Japanese skilful
bartender had shaken will throw him down, with the strong alcohol contains in
the Shaken vodka martini.” We told about the weak martini in the 007 movies over
a glass of sherry and a glass of thick White lady at the early evening.
The shaken vodka martini must have been very thin and tasteless
in the Bond movies as Sky fall (the bartender in Macao was at least better than
other ones.), Casino Royal or Living Daylight (we may know the taste of the poison
in such as thin martini). When I visited to the bars in these Anglo-Saxon countries,
I had been very disappointed the quality of the cocktails. The bar man in these
countries used very loose ices containing a lot of airs bubble and almost
melting for their cocktails. They also were not able to measure the amount of liquors
for the cocktails. The shaken vodka martini made with loose ices were nicely
weak cocktail before going out on missions. In the United States or England,
the ice for the cocktails is really low quality.

Ian Fleming may have known and anticipated the worrying future
of cocktail in UK. He had Mr Bond drunk 92 units per week in his novels. In this
“scientific” article, the author had described that he counted the vodka
martini as 3 units alcohol (1unit is 8 g of ethanol.) same amount as the glass (150mL)
of the wine or Japanese sake. The Dukes bar in Dukes hotel, London where Sir
Fleming loved to drink and was inspired the Vesper martini is serving 8 units alcohol
martini with 150mL Martini glass. He had written Mr Bond as the strong role
model but the movie producers had drawn his as the “not-real drinker.” The
amount of alcohol unit must flexed depends on the recipes of the cocktail.

The newest bar spot in Nagasaki
This bar entrance is likely as the Viennese café which has the heavy curtain which were hung in the entrance. In the late autumn to winter season, this curtains shut out outside cold wind and air in the public space of this bar, are will be very useful for the visitor. The interior and furniture are shown like the British style of this public bar.
The interior was conservative but gave the relaxed atmosphere to the guests. The red brown colour of Rose wood were nice accents in your view. Orange lights were nicely reflected from a lot of glasses. The space was small but comfortable .
The cocktails are lovely because the bartender has training in the famous and popular bar named Bar Waverly located in the city centre of Nagasaki. I had Gin with tonic, Side car and dry Martini on my first visiting bar. All cocktails were nice quality and very traditional style.
I was very surprised at that he serving the Master’s dream beer from the Suntory premium Malts series. The flavour and taste of this brand is very lovely in Japan. The bars where serve this brand beer is very rare. The bartender will serve you one of the best beer with his careful maintenance of beer server and skilful technique.
The nearest hotels are Wingport Nagasaki, Hotel Cuore Nagasaki, Apa hotel Nagasaki station (in front of the satation) and Chisan inn Nagasaki. The master of this bar welcome to your visiting. If you will visit this bar for your drinking, the barman will help you at Nagasaki city.

The bamboo bar, Mandarin Oriental Bangkok, Bangkok, Thailand [renovated]
The renovated classic hotel bar in Bangkok
The Bamboo bar was located in the Mandarin Oriental Bangkok. The renovation in the main building is now running in this hotel. This bar had firstly been renovated and re-opened on this February 2015.
You can find the prior Bamboo bar sign hung on the wall with other autographs. This sign was used to be hung at the entrance of the prior Bamboo Bar.
The several original signature drinks were famous with Thaijito or negroni etc. I had ordered Thaijito, classical cocktail from this bar and Liquid cigar, infusion cocktail.

The bartenders were very good at producing the new infusion cocktails. On my visiting, I tried the liquid cigar. which was served with leaves of cigar. The base liquor was Ron Zacapa 23yo infusion with the Montecristo. The taste and flavour was nicely sweet but some bitter from the cigar leaves. The smell were based on the cigar without of the smoke.

Dukes bar, Dukes hotel London, St James`s, Westminster, London, UK
Like James Bond? No, command him.
The Dukes hotel in London is very famous as the hotel has
Dukes bar. This hotel was located in the heart of Westminster. The most
famous gentlemen who have some drinks at this bar may be Ian Fleming. The
signature martini is not shaken, not stirred.
The recipe is very simple, as almost persons may can make
it. But the service on the wood cart and bar atmosphere will add some flavour
on the glass. The bartenders will serve the martini on the wooden cart. He dropped one dash of vermouth in the martini glass and pour the gin, normally No.3 gin from berry brothers co., into the glass and twist the Sicily lemon above the glass.
I just recommend you to remove the lemon peel from your
glass, if you will take long time to enjoy it.
The shaken vodka martini which I tasted out of Japan is a
kind of beer. Loose ice (almost melted, containing air bubble) and rough and
careless bartenders caused very poor martini oversea.

Martini in Nagasaki? Visit Sakae bar!
It was come from the bartender mistake. But it has shown me what is the Sakae bar style martini.
One Sunday in summer, I have been this bar to enjoy the last drink of the weekend. Then I just had a seat at the counter, I have ordered a glass of vodka martini. After a moment's thought, the lady bartender search her notebook to find the recipe. I was wondering whether she did not know the vodka martini recipe. She prepared the bottles; lillet, Gordon gin, grace goose. She measured and shake them and poured into the martini glass. The colour of cocktail was a little bit yellow coming from the Lillet. Her shake was very soft and completely nice for this cocktail. Eva Green would not have made a moue of discontent if she had this cocktail. The harmony of the bitter, fruity and dry had been complete on one glass. The cocktail was Vesper martini.

The interior was very authentic. The black rock counter made us feeling cool in summer. The spot right is on the glass filled with cocktail or liquor. This bar will also serve whisky, fruit cocktail or cigar.
This bar is located in the quiet area in city centre of Nagasaki. From the window, we will find the storehouse for the float named the spouting of a whale. This float will be used for the Okunchi festival which is normally held on early October in Nagasaki. The chef bartender is looking forward to joining in the Okunchi festival as the duty of town. The dragon dance, known as Ja-odori, is one of the famous and popular piece in Okunchi festival. The float of the spouting of a whale is popular as the whale blows the water from its top. I am a fun of this float since I met it two years ago. The people of Nagasaki who love to eat and live together with whale, express their love as the Whale float (I will write about the whale food in Nagasaki in future). SS(sea Shepard, the trademark of similar to Nazi SS) or IS (they also have similar mark as SS) are not able to express their principal as this float. You will find this float every seven years, because the duty will rotate around the towns by year by year.

Re-visit, Sanlucar bar, Kagurazaka, Tokyo, Japan
One of the most famous bars had come back!!
These several weeks, this bar has been closed due to the operation. The bar has come back to normal opening. I have re-visit to this bar for my post dining entertainment.
I had started with gin with tonic. The normal style in Tokyo has served in front of me. I had satisfied my thirsty with this beverage after cycling around the metropolis of Tokyo.
The sherry is one of the most signature drinks in this bar. The master has the license of venenciador of the sherry. He will serve the best choice of the sherry for your condition or you favour from his stocks. The bottles of sherry have been stored in the 15 degree Celsius wine cellar. The best condition and selection will be serve for you.

The cocktail will very nice for you. The barman had signature victory in a lot of championship. His cocktail has been the lovely harmony in one glass of cocktail. The gimblet I have ordered on my visiting was very nice harmony on the glass. The clashed ice pieces have shown as the snow on the glass.

The business hour will change from 4th August 2015.

American bar, The Savoy hotel, London, UK
I hope this bar staff improve technique beyond the history of the hotel.
The American bar in Savoy hotel is one of the famous bars in London. In the evening, a lot of ladies and gentlemen come and sit on a stool at the bar counter to enjoy their glass of cocktail and time. The barman or other staffs seemingly were proud of the occupation in this bar. The orange light was reflected from the brass in the furnishings.
This bar is very famous in the world as published cocktail book named “The Savoy cocktail book” which was the bible of the bartenders. The first book was written by Harry Craddock who was the chef bartender.
I had a glass of Gin with tonic, Rum with soda and gimlet on my visiting. The technique of bartender and presentation of the cocktail were nice, but the taste or flavour was unfortunately not so good. All cocktails are very wet.
The Gin with tonic was not bad. The premium Gin, No.3 gin from BBR had hugely helped the barman’s skill.
The Rum with soda was very bad; just brown liquid with bubble and no smells of the sweetness like caramel from Pusser’s. The long cocktails added some mineral water, soda or tonic water were called “Wari-mono (割りもの)” in Japanese. Some skilful bartenders always tell me the ratio of the liquor and added soda or tonic water. The Balance of the ratio had been broken.
The last one was not worthy of the name of the American bar. The gimlet was very wet and smell of lemon. The balance between bitter, sour and sweetness has lost after shaken. The barman had shown the cutting the ice in front of me. The edge of ice cube was dull to give huge surface area to the ice cube. On using the dull edge ice cube, all cocktail has gotten wet on service and had lost the flavours from liquor or fruits.
The Service of the bar was great. The barman or staffs listened to me; the English was very poor. I hoped this bar will be the sacred place for hard drinkers or bartenders to get a wonderful glass of cocktail.

The riverside terrace and the bamboo bar, Mandarine Oriental Bangkok, Bangkok [Before renovation]
I really love to drink a glass of Thaijito on the sunset at
this terrace in Thai winter. And I prefer to approach from the riverside using
the hotel boat. The winter in Thailand is very comfort and relaxed atmosphere. The
climate is hot but very dry and show some cool winds at Bangkok. If you have
chance to go to Northern Thailand like Chiang Mai, the cool morning and hot
afternoon with comfortable wind will be nice for you vacation.
This Mandarin Oriental Bangkok is the Flagship hotel in the
group of Mandarin Oriental hotels. This hotel has the atmosphere of luxury and exotic
with sophisticated interior and the kind hotel staffs.
The riverside terrace used to be located next to the Bamboo
bar. The Thaijito is made from Thai whisky and Thai herbs (Japanese ginger etc.)
The flavour was very lovely and fleshed with a lot of kind of the herbs. The
fried Fava beans were served as the side snack of the cocktail. This was also
nice.
Some restaurants or Shops are renovated since my last
visiting. The bamboo bar and the souvenir
shop were renovated. I hope they can keep the style of the bar.
Please be careful for your dress code on your visiting this
hotel. I recommend you to a little dressed up, a jacket for men to escort his lady,
to have the luxury service at this hotel.

A feature of Bar in Kagurazaka, Tokyo
“Tell me at which bar and what you drink
and I will tell you what you are.”
To drink to be satisfied himself or
herself is very difficult; to drink to be drunk will be easy.
What you drink or where you drink is as
very important as what you eat. Kagurazaka is the town that a lot of bar were
located in very small area. In this town, these “what” or “where” is very
important for us, visitor.
There are a lot of conditions when someone
choose a bar, from location, cocktail, bartender or bar interior. There are
also a lot of factor to satisfy someone when drinking at a bar, as customer-self
(physical or mental condition), weather, temperature, society or companion so
on. These factor and condition will be a matrix which made a customer
satisfactory.
I would like to introduce the bars from
Top of the hill of Kagurazaka.
Sanlucar bar
The barman plays the harmony for your glass.
The cocktails are based on the harmony of the liquors. The hard
shaking which is special in Japanese Bartenders will make a glass of cocktail
beautiful and mellow inside. The technique is very sophisticated and the
service is warm.
The right brown wood and white wall show very nice contrast. The latticed
large window will be the design from traditional Japanese town house, Machiya (町屋).

Bar-geek in Tokyo or Japan. It is very difficult to find a seat for yourself.

Feel the marriage of the liquors.
The balance of the cocktail served at this
bar is lovely, sweet, dry, bitter or spicy etc. All flavour and taste have nice
marriage in a glass. The Bartender’s skill was wonderful on steering and
shaking. The selection of the vintage liquor, whiskeys or Rums is perfect.

Japanese stucco made a traditional Japanese atmosphere. I feel comfort to drink
a glass of gimlet on leaning against the mortal wall.

The liquor history in the historic area
There are a lot of vintage whiskeys on the
shelves behind the bartender. I will not be able to decide the liquor which I
would like to have. You will find the history of the whiskeys or other old
liquors from his selection. The cocktails are also lovely.
The red brown wood bar counter were well
polished. The lalique glass will reflect the beautiful days in Kagurazaka. I
need a jacket to visit this bar for presenting my respect for the barman and
the history of liquors.

The sapper is lovely as the public house in Scotland. Sudden some Scottish words were kept on rising to my lips. The interior is very traditional British style.

The British public house(Pub) in Kagurazaka
There are small counter for 5people, some tables and high tables and barrel from the Chichibu distillery in this pub. The white wall, dark brown floor and black or dark green furniture are shown the traditional Scottish pub atmosphere in the United Kingdom. The brass knobs or goods on the counter are shining with warm yellow light. Some cloths like souvenirs from Scotland add the colour in this pub. The customer can choose their style on drinking, standing, sitting on the high counter or the table space.

menu has very variety in this pub. The chef has trained in some famous
restaurant and is serving very traditional pub food and some seasonal dishes.
This pub is known as the restaurant serving one of the best Fish and Chips in
Tokyo.

and Chips is a little bit small, compared from the British. But the taste of
the fish is better, fresher and nice texture. They also bring the malt vinegar
for your fish and chips. The chips are very lovely size for the malt vinegar
and portion to eat. The potato was come from Japan but the oil flavour and
tastes are lovely.
They have
various selected beer or whiskey. The foods were also nice. Some traditional
and typical pub foods in UK were served in this pub. This pub is for whoever enjoys
some drink and eats delicious food from afternoon. The beer selection was
mainly craft beers which come from small local brewery in Japan. Another
popular beverage in this pub is whiskey. The whiskeys are come from Scotland and
Japan. The Ichiro`s malt, which are very rare in the market nowadays, were
served in this pub. They had the trump series in their shelf. You can enjoy
them by half shot.

house is located in the heart of Kagurazaka, lower Kagurazaka. The neighbourhood
is very quiet and clam area, Italian restaurant, Soba noodle bars, authentic
bars or small Japanese traditional Kapo were located around this pub. When
approaching through the Ohtemon street(大手門) and turn right the corner at the
Kenban-yokocho(見番横丁), you will find the corner of the triangular
building. I prefer the view of pub from this point. The sign presented above us
is The Thistle and the name of the pub. The signboard is "The public house

The Bar, Unzen kanko hotel (雲仙観光ホテル). Unzen, Nagasaki, Japan
After you stay in the hot spring bath, you will feel very sturb. On the dinner, you can choose from the French or Japanese resetaurant. The French restaurant served the courses with vegitable and meat from Shimabara. They can serve the french full course from apetiser to cheese and desert and very nice wine list from their selar.
After dinner, you can have several glasses of alcohol in the Bar. The bar interior made very classical atmosphere. The wood small counter has just three or four stools. The touch feeling of the counter is very confortable. The floor was decorated with the tile which were calm colour and has aged polished shining.

Haguruma, Kagurazaka(歯車 神楽坂), Tokyo, Japan
This bar is like Zen, but very hard to understand.
The darkness of this bar was very heal full. We were not able to recognise the variety of the liquors in this bar, there is no menu book and no display of the bottle in the bar. In the darkness, I had found three candles in the back shelf and the rough detail of the bartender. When I looked the fire on the candle, I had travelled into the dreamily stoic atmosphere with the cocktail. The bar had very geek customer to love into the barman. The interior was very authentic but the sound was only from the refrigerator you cannot see. The sound of refrigerator had not been nice.
On my visiting, I ordered the Gimlet. The barman served one goblet of gimlet, very far from the recipe of the classical gimlet. The taste was just bitter and no sour and no sweet in the glass. The gimlet, I really ideal, is the balance among the bitter, sour and sweet. He had served me the gin with very bitter lime juice. I think, the barman cannot identify what the gimlet is from the view point of the history or the literature of this cocktail.
The barman looks to have the common sense of the public, but the commonsense of the cocktailology. Thus I have just one drink, all I feel from one glass was very unsatisfied. There are a lot of idea about the cocktail the barman serve in each bar, in each customer.
In conclusion, I cannot recommend to visit this bar for just your interest, but there is something to entertain you from the bar. I would like you to find something interesting or satisfactory on your visiting.

Le Sherry Butt, Bar, La Marais, Paris
The bar is located near the Saint Paul metro Station in Paris. There are Place de Vouge, Marais and Bastille etc, very famous sightseeing spots around the bar. The bar stands as other bistro or boutique in Paris, once I passed through in front of the bar. When you go into the door, the low light and wood interior is very comfortable.
The barman knows the service on the counter and has the skill for the very basic cocktail. In addition, he may try the new frontier like mixology or some other idea from cooking like Japanese or patissier.
At first, I ordered one glass of Gimlet as the first time I visit. He has shaken as the modern recipe and with lemon and lime peal to add the flavour into the drink. He also decorated the glass like knife curved lemon peal like Itamae, Japanese chef. The taste and feeling on my tongue is one of the best gimlet on my experience. The cocktail was well shaken, to get chilled, changed like milk white creamy. And he added the citrous flavour into that. I like very dry but beautiful balance gimlet among sweet, bitter and sour as the Barman at Bar Kakinuma, Japan usually makes. The Paris taste shown me the new European idea of cocktail.
The flavour and taste is really mixology idea cocktail. But the bartender skill is perfect in the basic of cocktailogy and knowledge in all around of liquid.
They also serve a lot of whisky but I have no chance to try that. I will return there.

Sanlucar Bar, Kagurazaka, Tokyo
The Bar was located on the top of the hill in Kagurazaka, in front of the metro station Kagurazaka.
The exterior is very exclusive, we cannot look inside the bar, like Japanese old town house, named Machiya(町家). Once we go into the bar, we will find the bar counter made from cheek wood and the nice only seven chairs and the set of table for four person. The interior looks like as the 70s Japasese mordean bar or living room. The 60s to 70s houses had the stools like this bar, like my hall in my home town.The bartender is very famous in Japan as the cocktail maestro, the name is Mr. Shinbashi. He serves with very soft talking but has some strong opinion about the cocktail and beverage in his bar.
On my visiting, I ordered a glass of whiskey, Gimlet and vodka martini. The basic cocktails are very nice. The Gimlet was served with the classical style, not classical resipe. A glass with tall foot was intaken the gimlet with ice. The taste is very nice balanced with soure, bitter and sweet, the soure was a little bit strong on the three.
The vodka martini is also nice. He made it with Finlandia and white velmot, Dolin Chambery Dry. The stearing is very controled, very dry, not wet, and smellfull of vermot. The taste was strong but the comfort and beatiful smell of vermot was running throught my nose. Normally I prefer the shaken vodka martine, sometime called Bond martini, but he showed me his thecknick of stearing.
The bar open from Tuseday to Sunday, 1400-2300. Before you reaching, I recommend you to make reservation for your seat.You will find what the real of Japanese bar is.
The bar is always crowded with the cocktail geek, then I go to Bar Kakinuma, my most favourite one.
