Champon, Kairakuen, China town, Nagasaki (会楽園 長崎市), Japan
There were a lot of China town in all over the world.
Several China towns in Korea, Seoul, Incheon had declined. Yokohama and
Nagasaki are declining. The China town in Yokohama has gone to the
commercialism, the shops or restaurants had been hang one-patterned slogan as
Tian jin sweet chestnut or "All you can eat for 2980 JPY".
The China town in Nagasaki is degrading like as the Champon
street and tourism spots. The Chinese food were not good taste and the service
in restaurant were on low level. The owner of the restaurant, who had the root
in the Chinese continent, generally love to calculate their money and immediate
profits and don't love to think about the taste, service or customers of
restaurants. The lantern festival in Nagasaki is the example of the success
growing the profits of the overseas Chinese. There were a lot of agree,
purified worship of mammon example coming from the Mainland of China to China
town in Japan.
The China town in Nagasaki had gotten commercialism and
tourism spot. All Chinese restaurants are nice just to taste the Champon
noodle. Champon is one of the mother tastes in the Nagasaki. Each family has
the different style of Champon. The ingredients were depend on the families and
the refrigerator. This Champon(ちゃんぽん) were made from the leftovers in
the refrigerator in Nagasaki. The soup were precooked and the noodle were
packed in plastic bags. The ladies in Nagasaki can get this basic combination
at supermarkets. The leftover ingredients, like vegetable, fish ball or meats
were fried on the pan. After combined all food on the pan, the soup were added
and the noodle was last. All ingredients were mixed up in the pan.
Each family has the mother taste. People in Nagasaki have
favourite style of Champon. The soup were cooked from the pork born or chicken.
The noodle were different among the factory of the noodle. There were huge
combinations among the families.
My family prefer the Kairakuen style. The milky brown soup
and the nice texture of the noodle was lovely. After mixed up (Champon means
"mixed up"), the smell will be changed like seafood essence.
The dōngpōròu(東坡肉) was other signature. pork meat steamed and braised with sweet sauce.
