The dinner course, Kayanoya (茅乃舎 レストラン), Fukuoka
Dashi is the basis and necessity of Japanese foods.
Japanese foods contain the Umami taste
in itself. This Dashi taste which has rich of Umami was an identity in Japanese
foods. When we talk about Japanese foods, we must remind the taste or flavour
of the dishes. The Dashi taste is the most important part in Japanese foods as
the butter in the French.
The restaurant, an icon of Kayanoya is dining facility, is located in the countryside of Fukuoka. The exterior and interior was traditional farmer’s house. This house picture was printed on their products. Kaya-buki roof (thatched roof) is the bland icon of Kayanoya.
Kanoya is a bland company producing a high-end food
from Fukuoka, Western island Kyushu. Kanoya basically was run as a Dashi
producer as several variation of blended Dashi. They had developed their
business as the “taste and flavour company” which produce various condiments or
foods. The origin of this company was a bag of Dashi. This pack was used like
as the tea bag, dipped in hot water and use a thick essence for the daily
foods.

The dinner courses were cooked with the local
ingredients and products from Kayanoya; the dressing sauce of salad, Dashi soup
for the pots, sauce for Sashimi (not only say sauce). The course was formed six
dishes as the traditional Japanese style full course. All dishes were designed
as the modern Japanese style.
The course was formed, Starter, Vegetable soup (soup
from the lands), Mukouduke (Sashimi), seasonal dish from the kitchen, small
dish of grandmother from Nagano (traditional style foods), Main course (choice
from the lists) and dessert. The course was started with the sweet light liquor.

Fukuoka is
the city has passion and optimistic atmosphere. Fukuoka is located at the heart
of Southern – Eastern Asia where foreign culture was imported and introduced at
the first time in Japan from ancient. The people who live in Hakata are very
passionate and prefer the fast development in everything. There is one very
interesting story about a bowl of Udon noodle. The people in Hakata prefer

important things for the Ton-kotsu ramen to assess the soup stock.
This Ramen
bar is located in Nakasu, the city centre of Fukuoka. They serve very classical
style of Tonkotsu Ramen (Pork bone soup stock ramen 豚骨ラーメン). The very
white and milky brown soup has traditional pork bone soup stock flavour and
taste. The noodle is straight and has great texture. This combination is very
important for the people from Kyusyu Island. The soup has the essence of nice
smells of the pork bone soup stock without spoiled with spend the days. The
noodle hardness is very nice marriage with the soup. And we can feel the freedom
in how to eat the ramen when we order a bowl of ramen in Fukuoka, because we
can choose from the variation of the hardness of the noodle, the spicy or chili
taste or topping. You can choose from the all staff except the thickness and
taste of the soup stock.
