Bibimbap in the sky, Club world, British airways

In this new year holiday, I have been to Europa with British Airways. The flight has departed from Incheon international airport, Seoul. We were assigned in the First class on the flight from Seoul, and in the Club World on the return.

I was very interested in the Bibimbap on the menu in the First class. The British airways seemed to think very important to serve the local people on board, not only British and European. On the flight to/from Tokyo, they serve very nice Japanese food on the flight. The Japanese food has very huge variation to serve onboard and it may be very easy to cook but difficult in the taste for the cabin meal, the Japanese food is very low salt. The BBC documentary about the cabin meal showed the tasting and nosing sense in the flight are lower than that of ground, due to the low air pressure and low moisture. On the other hands, the Korean food may be very difficult to serve on board, because they have a lot of soup and noodle in their recipe. The dish of hot soup may be difficult to serve on all classes.

The British airways is serving the Bibimbap on the First class and Club world, as other Korean carrier: Korean airline and Asiana airline. When I think about the Korean food, I have a lot of favourite, but no idea to serve on board.
The bibimbap is very reasonable menu to serve on board.

 
Kimchi and Cochujan


The bibimbap on the club world from London was very exsotic food serve some pickled vegitable and some braised meat on the steamed Indian long rice. The sesame oil smell from Korea, the oil is different from Japan in the smell, will rouse our appetite. The kimchi the serve with the main dish reminded me the flight was to Seoul. The service on board was very nice in both class, First and Club, but the BA will change the aircraft from Boeing 777 to 787. This means the First class service will close on 30th March 2015.

Well-balanced Gimlet, developed recipe in Japan

About the bar.

Gimlet is one of the famous cocktails in bar counters. I have very few experiences to have nice Gimlet overseas.


The Gimlet of Bar Kakinuma is very sophisticated. The colour of his cocktail is foggy white like frost glass from Lalique. The taste and flavour of ingredient show lovely marriage in the glass. Sweetness from powder sugar, sour from lime and bitter from Gin were well-balanced and the flavours like flower, herb and lime show the “Blenhuim bouquet” from Penhaligon’s.

There were some theories on the recipes of Gimlet. According to the Savoy cocktail book, one of the bible of bartenders, there were two different descriptions on the Gimlet.

-      GIMBLET COCKTAIL: 1/4 Lime Juice. 3/4 Dry Gin. Shake well and strain into medium-size glass: fill up with soda water.

-      GIMLET COCKTAIL: 1/2 Burrough’s Plymouth Gin, 1/2 Rose’s Lime Juice Cordial. Stir and serve in same glass. Can be iced if desired.

Gimblet recipe is similar to the modern Gin Fizz. The classical style of Gimlet was use with lime juice cordial as the recipe of Hotel Okura Tokyo. The sweetness of this juice will break the good point from ingredients of this cocktail.

The cocktail recipes of Gimlet in Japan showed the fusion of traditional Gimblet and Gimlet described on the books. The reason is, buying and storing the fresh lime juice is very easy for citizens in developed countries.

Le club, Hotel Sofitel Legend Metropole Hanoi, Hanoi, Vietnum

This colonial hotel will make you prevent from the noise of automobile in the capital streets. The luxury lobby seems the one hundred years time line beyond the WWII, Vietnam War and these days development of Hanoi.
Entering into the main lobby, there is  very small title of  the bar. The bar is faced to the courtyard of the hotel. After sunset, the cool but tropical wet wind with Vietnam spicy smell is passing through and the dark night will come, the ladies and gentlemen gather into the bar to enjoy some drinks and snacks.

I had several visit during my stay in Hanoi. I had ordered the daiquiri martini with lemon sorbet. The balance of cocktail with sour, bitter and sweet is very suitable for my taste feeling tired the tropical, hot and wet weather. And the lemon sorbet, as the side dish for this cocktail, was wonderful to show the marriage with the cocktail. It was very citrus flavor and a little bit mint but not so sweet.

On the first article, I would like to write about my favourite hotel bar, which a part of the American are very familiar to the location of bar. This bar will open noon.
The glass of windows are large, but the interior is the British motif like British pub. The pub in UK have very small window for cold winter. In the beautiful afternoon, I feel very comfortable with brown beverage and sunshine from the window. In the evening, I am able to relax and enjoy the cocktail and liquor in the classical and formal mood. On the noon time, you will hear the Beatles lines, but on the night, will hear the comfortable noise of people talking.

I had chose the gin and tonic and gimlet on my visit.  The tonic water was come from UK, very sweet one. I have felt the classical texture from the cocktails. The gimlet they served was according to the very classical recipe, shaken gin with lime juice(I think that was Meijiya's lime juice).

After several drinks, I recommend you to go through the lobby of main building to your room. The quiet and tensioned atmosphere is very nice for your nightcap.

When I am starving, I make it a rule to order the Japanese wagu steak sandwich. I will enjoy the luxury and tasty beef, but we cannot enjoy that in London or other city in the world (Except BA burger in the British airways lounge in LHR). Please try it when you visit the bar(lux pub).
